Quinoa & Wild Rice Salad With Ginger Sesame Dressing

This is taken from the NY Times recipe by Martha Rose Shulman.

It is super healthy, and super delicious. 

Quinoa & Wild Rice Salad With Ginger Sesame Dressing

FOR THE GRAINS AND VEGETABLES
  1. 2 cups cooked quinoa
  2. 1 cup cooked wild rice
  3. Salt to taste
  4. 1 red bell pepper, cut in 2-inch strips
  5. 1 cup diced cucumber
  6. 1 cup edamame
  7. 1 bunch chopped cilantro
  8. 3 tablespoons chopped or thinly sliced spring onions or scallions
FOR THE DRESSING
  1. 2 tablespoons freshly squeezed lime juice
  2. 1 tablespoon rice vinegar
  3. 2 teaspoons minced fresh ginger
  4. 1 small garlic clove, minced
  5. Pinch of cayenne
  6. Salt to taste
  7. ½ teaspoon soy sauce
  8. 2 tablespoons Asian sesame oil
  9. ⅓ /80ml cup light oil (canola, rapeseed, etc.)
Instructions
  1. Toss together all of the salad ingredients.
  2. Whisk together the dressing ingredients and pour over the salad.
